Inspired by the sun-drenched coastlines and South Africa’s beloved braai culture, our Lemon & Herb blend is a masterful orchestration of brightness and depth. It strikes a flawless balance between the vibrant, sharp tang of sun-ripened citrus and a sophisticated bouquet of classic garden herbs. This blend isn’t just a seasoning; it’s an acid-and-herb catalyst designed to cut through richness, tenderize proteins, and deliver a clean, refreshing burst of flavor that honors premium ingredients.

Chef's Featured Recipe:

 

Succulent Lemon & Herb Flatted Chicken

A foolproof, high-impact recipe engineered to prevent dry meat. By utilizing a wet emulsion marinade, the chicken absorbs the citrus-herb oils deeply, resulting in a beautifully caramelized, crisp skin and incredibly juicy interior over the coals or in a fan-assisted oven.

 Prep time: 15 mins

 Marinating time: 1 to 2 hours (Strictly do not exceed 4 hours to keep the meat texture perfect)

 Cook time: 35-40 mins

 Total time: ~2 hours

 Servings: 4

Ingredients:

​

The Protein:

 1.2kg to 1.5kg Whole free-range chicken, butterflied (flatted/spatchcocked) or 1kg chicken thighs (skin-on, bone-in for maximum juiciness).

The Chef-Grade Emulsion Marinade:

 2.5 tbsp The Spice Atelier Lemon & Herb Spice Blend

 ¼ cup (60ml) Premium Extra Virgin Olive Oil (or Avocado oil)

 3 tbsp (45ml) Freshly squeezed lemon juice (Never use bottled concentrate)

 1 tbsp Grated fresh lemon zest (for that pure essential oil aroma)

 2 cloves Fresh garlic, finely minced

 1 tsp Sea salt flakes

To Baste & Finish:

 50g Salted butter, melted (mixed with a half-teaspoon of the spice blend)

 Fresh Italian flat-leaf parsley, chopped

Step-by-Step Instructions:

​

1. Prep the Protein (10 Mins)

Pat the chicken skin completely dry with paper towels. (Chef’s Note: Dry skin is the secret to getting that ultimate crispy texture, whether on the braai grid or in the oven). If using a whole chicken, ensure it is flattened evenly so it cooks uniformly without leaving any raw or overcooked spots.

2. Create the Wet Emulsion (5 Mins)

In a medium bowl, whisk together the olive oil, fresh lemon juice, lemon zest, minced garlic, sea salt, and The Spice Atelier Lemon & Herb blend. Whisk vigorously until the oil and citrus form a thick, unified emulsion. Pour this over the chicken, rubbing it thoroughly under the skin and into the meat. Cover and refrigerate for 1 to 2 hours.

3. The Cooking Process (35-40 Mins)

 Option A: The Authentic Braai (Recommended)

Prepare your coals to a consistent medium heat. Place the chicken on the grid, skin-side up first, away from direct roaring flames to prevent the herbs from scorching. Grill for about 20 minutes, then flip to skin-side down for another 15-20 minutes until the skin turns a stunning golden-brown and crisps up.

 Option B: The Professional Oven Roast

Preheat your oven to 190°C (Fan-assisted). Place the chicken skin-side up on a wire rack over a baking tray. Roast for 35-40 minutes.

4. The Baste & Rest (Crucial Step)

During the last 5 minutes of cooking, brush the chicken generously with the melted lemon-herb butter. Once the internal temperature reaches 75°C (or juices run completely clear), remove it from the heat. Let the chicken rest for 8-10 minutes before carving. This locks the juices inside so they don't run out onto the cutting board.

5. Serve

Garnish with fresh chopped parsley and serve alongside grilled seasonal vegetables, a crisp green salad, or traditional garlic bread.
