Cape Malay Beef/Chicken Akhni

Akhni Masala is an authentic, highly aromatic spice blend central to Cape Malay cuisine in South Africa. Its flavor profile is distinctly defined by a dominant combination of ground fennel, cumin, and coriander, creating a warm, slightly sweet, and earthy aroma. Unlike other biryani mixes, it focuses heavily on these core aromatics to perfectly season meat and steam potatoes and rice together in a single pot.

Prep time: 15 mins | Cook time: 45 mins | Serves: 4-6

Ingredients:

 1 kg Beef or Chicken (cut into pieces)

 3 tbsp [Your Brand Name] Akhni Masala (The Main Spice)

 2 cups Basmati Rice (washed and drained)

 3 Large Potatoes (peeled and halved)

 2 Large Onions (finely sliced)

 ¼ cup Cooking Oil or Ghee

 1 tbsp Ginger & Garlic paste

 3 cups Hot Water

 Fresh coriander for garnishing

Method:

1. The Base: Heat oil/ghee in a large heavy-based pot. Fry the sliced onions until deep golden brown. Stir in the ginger & garlic paste.

2. The Meat & Spice: Add your meat and 3 tablespoons of [Your Brand Name] Akhni Masala. Sear the meat on medium heat for 5 minutes until fully coated and fragrant.

3. Simmer: Add 1 cup of hot water, reduce heat, cover, and simmer until the meat is par-cooked (15 mins for chicken, 30 mins for beef).

4. The Layers: Layer the halved potatoes and the washed rice over the meat. Do not stir. Pour the remaining 2 cups of hot water gently down the side of the pot.

5. The Steam (Steaming): Cover tightly with a lid (or foil under the lid). Cook on high heat for 5 minutes, then reduce to the lowest heat setting and let it steam for 20 minutes until the rice is fluffy and potatoes are tender.

Garnish with fresh coriander and serve hot with dhay (mint yogurt) or sambal.
